An Italian Tradition
"Stefano" is Stefano Grizaffi, born in 1896 in Vallelunga Sicily, Italy. Over the years, Stefano and his wife Lucia DiMaggio Grizaffi crafted handmade Italian delicacies that filled the neighborhood with tantalizing aromas and escalating envy. It was their personal recipes that helped Stefano and Lucia build a reputation for crafting the finest artisan Italian cuisine. Generations later, Stefano's secrets immigrated to America when his grandson landed in New York and eventually opened his first deli and pizzeria. To honor his inspiration, the place was named Stefano's and carried all of the family's favorite recipes for the Old World. People from all over New Jersey and New York flocked for their delicious pizzas, calzones, Stromboli and stuffed breads. To meet increasing demands, Stefano's grew to where they are today – a foodservice company and food service manufacturer serving most U.S. cities the original Stefano Old World Italian artisan cuisine.

Teri Turk is just one of many industry professionals who have built a solid relationship with the Stefano family. According to Turk, Stefano brokers collaborate with her to recommend solutions to problems that fit in their price range. "[We] discuss all the products and…choose what's best for the college." Presently Delhi College carries Stefano Four Cheese Stuffed Rip'n Dips, Pepperoni Rip'n Dip and Pepperoni Calzones. "The students seem to like them a lot," says Turk. "Our experience has been very good. I would recommend Stefano to other colleges because the kids seem to like [their products]." Turk also shared that Stefano products are not only great for the dining halls but for use in campus convenience stores for students to purchase during non-dining hours.

Minis are growing, now showing up on 30% more menus than just four years ago, with highest penetration in casual dining, where nearly 40% of restaurants feature one of these trendy offerings.
Menu Creation: Of minis, Italian minis are the second most popular. Offer on-trend Calzonettis and Mini Rip-n-Dip® stuffed bread rings to create more customer pull and added menu sales.
